Analysis of Excelsum Extra Virgin Olive Oil

Acidity of 1% or less is required for olive oil to be graded “Extra Virgin”.  The excerpt below is from the official analysis in Umbria Italy, which states our extra virgin olive oil acidity as only .13%.  This low acidity places it among the very best of extra virgin olive oils.  The olive oil inspectors return after work to purchase this oil for their own use, further testimony that it is the highest quality.
